Ingredients for making Aula pickle
1 kg aula
250 grams of mustard oil
100 grams of asafoetida
50 grams of mustard
25 grams of cumin
10 grams of fenugreek seeds
5 grams of red chili powder
2 grams of turmeric powder
1 gram dry mango powder
Salt to taste
Aula pickle recipe
First of all, wash the oats well and soak them in water for 10-15 minutes.
Then take them out of the water and wipe them with a dry cloth.
Now cut the dough into half or fourths.
After this, heat mustard oil in a pan.
When the oil is hot, add asafoetida, mustard seeds, cumin seeds and fenugreek seeds.
When these spices start to crackle, add red chilli powder, turmeric powder and dry mango powder and fry.
Now add chopped oats to it and mix well.
Then reduce the flame and cook the aula along with the spices for 10-15 minutes.
Keep stirring from time to time so that the aula does not burn.
When the dough becomes soft and the oil comes to the surface, add salt and mix well.
After this turn off the gas and let the pickle cool completely.
After it cools down, pour the pickle into clean and dry glass jars.
Close the jar tightly and store it in a cool and dry place.
Special tips
You can also add other spices like coriander powder, garam masala etc as per your taste.
If you want to make the pickle more spicy, you can increase the amount of red chili powder.
To store the pickle for a long time, you can add some mustard oil to it.
